Basil
Ocimum basilicum
Gather ye basil while ye may. This fresh herb that makes summer cuisine unforgettable will give up the ghost at the first hint of a frost. Dry its leaves or freeze in olive oil. As frost approaches, root cuttings or pot up plants and overwinter in a southern window. Basil plants produce over the entire growing season in rich, moist, well-drained soil. Give them plenty of sun. Encourage growth by tip-pruning well below any flowering stems. The wide variety of choices in basil range from lettuce-leaf basil to Spicy Globe and Green Bouquet, both of which are small-leaved plants.
